Well, here's the thing. I don't play CS:GO often, but I have the game, and it's really fun. I'd love to open another server, but it costs a lot of money (if you care about low ping, high frame rate and good performance) and I don't want to start a server only a few people will enjoy. Also keep in mind, server competition for CS:GO is huge, probably worse than for TF2 (maybe not?), so it would be extremely hard to get enough players regularly.
It's a bit like when we decided to shut down the MvM servers. They were cool, and sometimes you guys would jump on it and have fun, but ultimately, they cost a lot of money, only 6 players can join at a time, and the majority of players were randoms that don't register on these forums or check the Payload servers.
As usual though, if there is a big demand for a CS:Go server, we can always think about it
